Description
Shinkan (meaning “quiet forest” in Japanese) is our minimally-oaked estate-grown Chardonnay.
This non-traditional approach of fermenting and aging in stainless steel drums and larger puncheons results in this zesty and delicate style.
The aroma is reminiscent of a pineapple Dole Whip with notes of nectarine and orange blossoms. It is lighter in body with flavors of lemon curd, brioche and a hint of hazelnut across the palate. A little citrus rind texture and juicy acidity make the finish very pleasant. It’s an easy one to keep sipping!
